Upsidedown Pineapple Cake


1 Medium sized can sliced pineapple (I used tidbits cause my OCD gets a little crazy when I can't get whole rings in the bottom of the baking dish evenly. Half rings drive me crazy!)
Lay the pineapple around in large skillet- mix 1/8 lb butter-melted butter.
Sprinkle brown sugar (1/2c white-1/2c brown) (I only used 1/2 cup brown that is a lot of sugar) over fruit. Let this fry slowly until it caramelizes, then set aside to cool.




 
Make a cake as follows.
3 eggs separated- beat yolks add 2/3 cup sugar and beat well-add 1-1/2 TBSP pineapple juice boiling hot (I didn't boil since I don't have a microwave and didn't want to dirty ANOTHER pan cause I don't have a dishwasher) and mix well. Add 2/3 cup flour and 2/3 tsp salt sifted. Mix batter. Beat whites of eggs and fold in. Pour this over pineapple and bake in a slow oven. Turn cake upside down on platter and serve with whipped cream.




I baked at 350 deg for about 20 min since there was no oven temp or time. My oven is a little hot.
